  • The long history between France and the Mediterranean created an interesting fusion, displayed mostly through food and architecture. France offers a mainland European backdrop tempered by the Mediterranean’s island themes, giving birth to some of the most mouthwatering dishes the world has to offer.

    Thankfully, those in the Philippines who wish to sample this beautiful marriage no longer have to cross continents, with Vatel making it available this side of the Pacific. Honoring the world-renowned French Hotel Management School, Institut Vatel, this restaurant can be found at the corner of Estrada and Arellano Streets in Malate, Manila.

    The rooftop restaurant can sit 70 diners comfortably but can accommodate a total of 150 guests for private dinners. Here, guests can expect to be served by students since Institut Vatel tied up with De La Salle-College of Saint Benilde School of Hotel, Restaurant and Institution Management. At the helm of it all is French chef Pierre Cornelis.

    Prawn Bisque with Clams (Php 160)

    While diners take in the magnificent sunset views of Manila Bay, they can indulge in the Prawn Bisque with Clams (Php 160). This seafood soup is hearty but not heavy, making it the perfect starter to any meal.

    Beef Bourguignon (Php 395)

    Braised Lamb Shank with Apricot and Rosemary Sauce (Php 395)

    Those who want a classic French main dish can try Vatel’s Beef Bourguignon (Php 395). This rich stew probably takes its name from Burgundy wine and not the region. Whatever its origins, diners are sure to want more of this filling dish.

    Roast Yellow Chicken Breast Stuffed with Spinach and Chorizo with Saffron-Red Bell Pepper Sauce (Php 475)

    For a slightly lighter main course, there is also the Braised Lamb Shank with Apricot and Rosemary Sauce (Php 475). Anyone who’s ever eaten lamb knows that cooking the meat properly is tricky business, rendering an extremely gamey taste if done wrong. Diners will be pleased to know that such is not the case here. The apricot and rosemary sauce also complements the lamb very well, cutting the richness of the meat.

    Meanwhile, the perfect French-Mediterranean pairing is probably the Roast Yellow Chicken Breast Stuffed with Spinach and Chorizo with Saffron-Red Bell Pepper Sauce (Php 475).

    Orange Vodka Ice Cream (Php 140)

    Cerveza Negra and Chocolate Ice Cream (Php 145)

    After the main course, dessert is always in order. Though rather unlikely of a French restaurant, diners may be interested to try the Cerveza Negra and Chocolate Ice Cream (Php 145) which has been a popular dessert ever since the restaurant opened. Cerveza Negra is blended into the ice cream mixture adding a hint of bitterness. Another boozy dessert is the Orange Vodka Ice Cream (Php 140). However, for those looking for a more classical French dessert with a Filipino twist, there is also the Mango Crème Brûlée (Php 135).

    Despite not bring traditionalist, Vatel is a restaurant that many will find themselves returning to, thanks to its food and its views.
