  • Souv! by Cyma is a modern restaurant in BGC that offers everyday Greek food. Opened in 2017, Souv! by Cyma’s unique concept came from Chef Robby Goco’s famous Cyma Greek Taverna restaurant. Its name was derived from souvlaki, a well-known dish from Greece made of skewered meat and vegetables.

    Upon entering, diners will surely be fascinated by its ambiance that will truly remind you of Greece from the trademark colors of white and blue. The interiors are stuffed with vibrant decors, light fixtures, and some names from the menu’s authentic Mediterranean flavors which are freely inscribed on a board above the bar counter.

    Each dish embodies the traditional Greek flavors by using 5 essential ingredients, namely salt, pepper, olive oil, oregano, and lemon. Their menu offers a variety of sinfully healthy dishes that cater to every customer’s choice from chicken, pork, lamb, or vegetable dish.

    Their best-selling dish is the braised and grilled Angus Beef Short Ribs (Php 1,250). Garnished in gremolata sauce, each piece of meat is a little crispy on the outside but is so tender it easily falls off the bone!  Just one tip, don’t forget to squeeze the lemon onto the meat to enhance the existing flavor before taking a bite of the succulent Angus beef. Diners will enjoy digging into this exquisite dish which can be perfectly paired with juicy Potatoes Au Jus (Php 180) on the side.

    Meanwhile, the Cyma Greek Clams (Php 710) is an angel hair pasta dish dressed in white wine, lemon, parsley, Parmigiano Reggiano, and extra virgin olive oil (EVOO). Once you bite into the thin and chewy pasta, you’ll easily taste its mild flavor with a sour kick from the squeezed lemon. Plus, the fresh clams incredibly complement the lasting savor, making it more tempting to scoop in another pasta serving on your plate.

    Aside from the mains and pasta choices, Souv’s salata or salad selection holds some of the known dishes from Cyma Greek Taverna menu such as the Cyma Roka Salata (Php 370/Solo, Php 550/Large). This gluten-free salad is made with arugula, romaine lettuce, sundried tomato, candied walnuts, and Parmigiano Reggiano drenched in Greek vinaigrette.
