    With this philosophy in mind, the artist-turned-chef opened the doors of Spanish restaurant Bueno Tapas and Wine Restaurant in Pasig to the public.

    Buena Comida

    Known for comforting dishes that reflect Chef Kennedy’s culinary journey in Madrid, Barcelona, and San Sebastian, diners will be delighted to see classic Spanish favorites such as Gambas al Ajillo (spicy garlic and shrimp in olive oil), Estofado de Res (slow-cooked Spanish braised beef), Paella Mixta (Seafood, Spanish chorizo & chicken paella), and Pulpo a la Gallega (Galacian octopus with potatoes, olive oil, and paprika).

    Everything is kept as authentic as possible from the ingredients and down to the cooking methods, showing the fruits of hard work and commitment from Chef Kennedy’s exhaustive, but fulfilling trips to Spain.

    “It was evident to me that I wanted to bring back home the best and the fullest of my Spanish culinary experiences by recreating a comforting dish from these regions. Initially, our dishes at Bueno were greatly influenced by the Tapas and Paellas of Madrid and Barcelona. As we continued to broaden the brand’s appeal by expanding our menu, we also took inspiration from Pintxos, and decided to adapt a more elaborate cooking method, after undergoing my training in San Sebastian,” the chef said.

    Here are a few favorites for when you visit Bueno:

    Arroz Meloso de Rabo de Buey is a unique take on the classic paella as Chef Kennedy and his team incorporate oxtail into the recipe. With the slow and long-hour braising of the oxtail producing a rich, velvety sauce, it has just the right amount of consistency with a distinct beefy flavor.

    Considered a staple among diners, Estofado de Res is beef braised for eight hours, making it fork-tender with superb intricacy to hit the right balance of savor and texture. The sauce that runs through every bite covers the meat with lush finish of deep flavor and color.

    Additionally, the extensive menu features a curated selection of wines, cocktails, and other alcoholic options that provide the perfect complement to every meal.

    Fine Wines

    Aside from its premium tapas and crowd-favorites, Bueno Tapas & Wine Restaurant offer fine Spanish wines to complete your meal.

    Wine lovers will appreciate the option to order by the glass, with offerings limited to Cabernet Sauvignon and Sauvignon Blanc. For other varieties, bottles are available upon request.

    The establishment also allows guests to bring their own bottles, with a corkage fee of Php 1,500 per bottle. The bottle-keeping service is available for up to 2-3 days, making it convenient for those who want to revisit their favorite selections.

    They also offer creative cocktails including the Classic Margarita, Lychee Martini, Pina Colada, and more that you may pair with their tapas and other Spanish favorites.
