Additionally, the restaurant uniquely incorporates the cuisine of Huaiyang, renowned as the most prestigious culinary style in the Jiangsu province of China. This style is celebrated for its slightly sweet flavor profiles and its delicate, intricate presentation, providing a blend of Southeastern and Eastern Chinese cuisine that is both contemporary in presentation and deeply rooted in its treasured heritage.
At the helm of Canton Road’s culinary team is Executive Chinese Chef Wang, who brings over two decades of experience in the kitchen. Before joining Shangri-La at the Fort, Manila, Chef Wang honed his skills at luxury hotels in Shanghai and at Shangri-La Hotel, Fuzhou. His expertise lies in traditional Cantonese and Fujian-style dishes, with a flair for infusing modern twists into these classic cuisines. Chef Wang’s dishes are meticulously prepared, representing a harmonious blend of tradition and innovation.
A highlight is their Jiangnan-style Sweet and Sour Pork Ribs (Php 588), a tantalizing fusion of flavors that dance on your palate. The Crispy Wasabi Coated Prawn Ball with Mango Pearl (Php 1,388) is an exquisite culinary creation that marries the boldness of wasabi with the delicate sweetness of mango. Canton Road’s ambiance is as refined as its menu, seating 191 guests and featuring nine private dining rooms, each named after iconic streets in Hong Kong. These private rooms cater to various group sizes and occasions, with minimum consumables starting at Php 12,888 for the Nathan room that can accommodate six to eight diners.
While walk-ins are welcome, reservations are encouraged due to the fluctuating number of guests between meal periods. Guests can also enjoy the added convenience of complimentary Wi-Fi within the hotel premises.
