The concept traces back nearly a decade to a simple realization formed over meals in Italy: the most memorable dishes were often found in modest, no-signage, mom-and-pop restaurants focused solely on good food.
That idea sparked the creation of La Spezia in Tomas Morato, a humble, no-frills outpost dedicated to honest Italian cooking without gimmicks. Over the years, constant realignment, refinement, and an unwavering commitment to craft shaped the founders’ culinary direction, pushing them to grow beyond what they had previously imagined possible.

That evolution eventually led them to Bonifacio Global City. Opening in BGC marked a dramatic shift from the residential surroundings of their first location. Towering buildings, corporate energy, and a more demanding dining audience presented new challenges. Still operating as a lean, hands-on team overseeing everything from the kitchen to branding and operations, the move became a defining moment, one that tested not only skill but character.

While La Spezia stood as a foundation, BGC demanded something more elevated and expressive. The space called for deeper execution, sharper identity, and a broader interpretation of Italian cuisine. From that challenge emerged Manarola.
