Under the leadership of Chef Joel Manchia, the restaurant offers a luxurious dining experience that seamlessly blends tradition and innovation. With over 20 years of culinary mastery across Europe, Asia, and the Americas, Chef Joel Manchia brings a world of experience, and a heart full of Sardinian soul, to the top floor of Finestra at Solaire Resort North.
Using authentic ingredients, the menu highlights modern interpretations of Italian classics, including veal Milanese, handcrafted pasta, and the much-loved Balik Salmon.

Guests can also indulge in standout a la carte selections from its Italian Journey Tasting Menu. To begin, the Ravioli del Plin delights with homemade beef ravioli in its own jus. Following this, the Merluzzo highlights Patagonian toothfish in brown butter with king oyster mushrooms, offering a rich yet balanced flavor.

For meat lovers, the Australian Boneless M5 Rib-eye presents 500g of perfectly grilled steak served with the patron’s sauce of choice. To complete the experience, the Finestra Tiramisu provides a decadent finale with layers of chocolate brownie, mascarpone cream, and refined cocoa powder.
