  • Noodle Lab is an artisanal fresh pasta shop in Poblacion, Makati specializing in made-to-order fresh pasta crafted with high-quality ingredients.

    Founded by couple Nico and Ally Gonzales after being furloughed during the pandemic, Noodle Lab started as a homegrown pasta concept focused on handmade fresh pasta and eventually grew into one of the known fresh pasta suppliers and concepts.

    Operating as a pastificio, Noodle Lab offers raw fresh pasta for home cooking, with products prepared for same-day pick-up and pre-orders through their website. The shop’s lineup includes spaghetti, lasagna sheets, linguine, tagliatelle, pappardelle, bucatini, campanelle, fusilli, rigatoni, ravioli, tortelloni, gnocchi, and specialty pasta items.

    Among its products is the Spaghetti alla Chitarra, a traditional pasta from Abruzzo, Italy cut using a guitar-like chitarra tool that creates a square-shaped noodle with a rough texture designed to hold sauces better.

    The shop also offers creative seasonal pasta dishes such as its Sweet Corn Agnolotti inspired by Mexican elote and glass gem corn, layered with sweet corn, ricotta, parmesan filling, popcorn mornay sauce, grilled corn, and honey corn flakes.

    Noodle Lab emphasizes proper handling and storage for its products, with most pasta sold raw and accompanied by detailed cooking instructions. Certain items such as ravioli, gnocchi, and the delicate Egg Yolk Raviolo require freezing or same-day cooking to maintain quality.

    Pick-ups are available daily from their Poblacion location, with orders released only to riders carrying insulated bags to preserve the pasta during transport.

    Beyond direct orders, Noodle Lab has also collaborates with restaurants, chefs, wine bars, and dining concepts around Metro Manila through pop-ups and special dining events. Their collaborations have included projects with The Underbelly, chef Matt Mijares of Ugly Duck, Supernatural Wines, and wine distributor Allora for tasting menus and pasta-focused dining experiences.

    Building on the success of Noodle Lab, founders Nico and Ally Gonzales also opened Delina, also known as The Pasta Place, their first official brick-and-mortar dining concept. The restaurant serves as an extension of Noodle Lab’s fresh pasta philosophy, offering handcrafted pasta dishes and casual Italian dining centered around their artisanal pasta-making approach.

    Focused on handmade pasta, traditional techniques, and seasonal creativity, Noodle Lab continues to build a following among fresh pasta enthusiasts in Manila.
