Established in March 2022, Chef Jose Luis “Chele” González crafted Samira’s culinary identity, merging elite Spanish techniques with local ingredients and experiential dining with its conceptual development in 2019 that was paused during the pandemic.

Samira by Chele Gonzalez offers three core dining experiences:
“The Cocido Experience”, a four-course reinterpretation centered on Spanish stew such as croquetas and paella.
They also offer six-course tasting menu, where diners encounter dishes like ceviche, grilled octopus, and their deconstructed Tagaytay‑style buko pie—their playful take on buko pie.
For those who prefer to dine à la carte, they have a robust à la carte menu with tempting selection of grill-forward dishes, tapas, seafood, and comfort mains that fuse Spanish techniques with local flavors.
One of their signature à la carte dishes is Gambas al Ajillo (₱1,440) that includes grilled shrimp with garlic, chili, extra virgin olive oil, and parsley.

On the other hand their Oven-Glazed Beef Cheeks (₱1,240) features beef cheeks on top of a creamy wild mushroom wet rice.
