    In 2025, Old Manila entered a new era with the appointment of Executive Chef Remy Carmignani, a protégé of French culinary legend Guy Savoy and a veteran of Michelin-starred kitchens across Europe and Asia, including Daniel Boulud’s Singapore restaurant.

    Bringing both expertise and innovation, Chef Carmignani blends classic French flavors with modern artistry, highlighting premium imported ingredients and the freshness of seasonal local produce.

    Among Old Manila’s signature creations is the Ratatouille Tart, a crisp tart shell filled with vibrant vegetables harmonized by basil and olive oil—a dish that balances health and indulgence.
