    Aside from offering authentic Chinese dishes and live seafood, Man Ho is integral to the I Love Earth (ILE) integrated sustainability program of Newport World Resorts. This program encompasses all hotel brands within the property, focusing on making a larger positive impact on the planet. One of the key pillars of ILE is the promotion of sustainable culinary practices, including healthy and responsible sourcing that prioritizes local products. The menu at Man Ho highlights these sustainability efforts, featuring items that utilize cage-free eggs, support local fruit, vegetable, and grain producers, and use seafood sourced in environmentally conscious ways. The restaurant also participates in two farm projects on the property: the I Love Earth Urban Farm, an advanced “machine farm,” and the Organic, Urban, Regenerative Farm (OUR Farm), a community-based initiative. These projects emphasize less land, water, and fuel use, and support local and responsible farming practices.

    Man Ho is headed by Executive Chef Meik “The Big Chef” Brammer, who was appointed in 2010. With over 30 years of leadership and experience in the kitchen, Chef Meik oversees the operations across the property’s three buildings: the Main Hotel, West Wing, and the Marriott Grand Ballroom. His deep commitment to sustainability is evident in his role as chair of the sustainable culinary committee of I Love Earth. He leads the team with a sustainability-first approach, from championing sustainable seafood and cage-free eggs to overseeing Marriott Manila’s own ILE Urban Farm. This ensures that every dish not only tastes exceptional but also contributes positively to the environment and local community.

    The ambiance of Man Ho complements its exquisite menu. The restaurant’s interior features lovely wood carvings, wide chairs, plush carpeting, and hand-painted fabrics that overlook the main dining area that set the stage for a memorable dining experience. The restaurant has a total of 140 seats and features 6 private dining rooms for up to 24 persons. Two private dining rooms can be combined for larger gatherings.
