Let’s Cook: Gapao Rice with Green Curry
Asians love rice dishes. Aside from being surprisingly simple to make, they are also flavorful and filling. So today, we’re making gapao, an excellent Thai dish made from minced chicken and herbs served with rice and egg. You will actually see its semblance to donburi and silog meals when you think of rice dishes with meat/fish, egg, and vegetables.
However, some don’t like it mixed with herbs such as coriander and basil due to their inherently strong flavors. So in this case, we’re going to prepare this the Japanese way using local ingredients with a dollop of green curry for some fiery kick. It makes for a hearty meal that is loaded with amazing flavors and is absolutely easy to make.

Ingredients:
120 g chicken fillet (thigh/breast), cut into bite-size pieces
20 g white onion, chopped
10 g leeks, chopped
10 g green bell pepper, chopped
5 g garlic, minced
200 g cooked rice
1 egg
15 g (1 tbsp) green curry paste
45 ml (3 tbsp) fresh milk
15 ml (1 tbsp) oil
1 pinch salt and pepper
Cooking directions:
1. In a pan, heat some oil and saute the garlic, onion, green bell pepper, and chicken.
2. When the chicken is almost cooked, add the green curry paste and fresh milk and mix the ingredients altogether. Season with salt and pepper.
3. Put the dish in a bowl and serve with rice and fried egg.
