At the helm is Spanish Chef Fernando Alcalá, a Marbella-born chef known for blending Andalusian roots with contemporary technique. A self-taught chef and former law student, he rose to prominence after being named Cocinero Revelación or Best New Chef at Madrid Fusión in 2019. That same year, he also won Best Cheesecake in Spain, a recognition that reflected his philosophy of using technique in service of simplicity.

His restaurant later earned a Bib Gourmand distinction from The Michelin Guide in 2020 and has held one Repsol Sun since 2021. In Manila, his culinary vision continues through Singular, while his other concept, Bolero, received a Bib Gourmand distinction in 2025 and was featured in the Michelin Guide 2026 Philippines edition.
The menu at Singular reflects Chef Fernando’s personal expression—Andalusian in soul, refined in execution, and shaped by memory, place, and innovation. Guests may experience this philosophy through two tasting menus: Snacks + 6 Course Tasting Menu, priced at Php 4,890, and Snacks + 10 Course Tasting Menu, priced at Php 7,890. Each menu is designed as a thoughtful progression of flavors, allowing diners to journey through Spain’s culinary traditions as reimagined with precision and a deep respect for ingredients.
The Atún con Pipirrana y Ajoblanco pays homage to the almadrabas of Cádiz, where tuna is caught by hand in a centuries-old seasonal tradition. The dish highlights tuna with salmorejo, ajoblanco, and pipirrana, bringing together the richness of the sea with the freshness of vegetables, garlic, almonds, and olive oil.

Another standout is the Caballa en Adobo con Gazpachuelo, a dish inspired by Málaga’s fried fish shops. Mackerel is cured in adobo, giving it a bright, vinegary, and slightly saline character. It is paired with gazpachuelo, a warm and silky fisherman’s soup turned into a gentle emulsion that softens the acidity of the fish and gives the dish a more rounded finish.

For something heartier, the Mero Asado, Arroz de Caldero y Pepitoria brings together roasted grouper, caldoso rice, and pepitoria. The dish reflects the meeting of sea and land through almond, egg, and chicken stock, with the rice absorbing the depth of the broth. It is comforting yet elegant, carrying the Mediterranean influence that has long shaped Spanish cooking.

For those seeking a more intimate dining experience, Singular features private rooms designed for small gatherings and special celebrations. One private room can accommodate up to 10 guests, with a minimum booking requirement of 7 guests.

Another private room, on the other hand, presents a versatile dining space for up to 14 guests, with the option to be enclosed for a more intimate setting.

To ensure the best possible dining experience, Singular kindly requests that guests communicate any allergies or dietary restrictions at least 48 hours in advance. While the team will do its best to assist with later requests, accommodations made after this period are subject to the kitchen’s approval.
Guests are also encouraged to complete the experience by observing the restaurant’s smart casual dress code, with tailored trousers, dresses, skirts, collared shirts, and elegant footwear encouraged, while athletic wear, beachwear, and slippers are best avoided.
