MŌDAN in Quezon City: A Progressive Take on Japanese Degustation
In the vibrant Cubao district of Quezon City, MŌDAN quietly stands out as one of Metro Manila’s most inventive dining destinations. The name, meaning “modern” in Japanese, aptly captures its ethos: a progressive take on Japanese omakase that gracefully reimagines tradition.

At the heart of this culinary experiment is Chef Jorge Mendez, recognized as SPOT.PH Chef of the Year (2024), and previously honored as Tatler’s Rising Star in 2023, as well as Best New Restaurant in Tatler Dining Awards for three consecutive years (2023, 2024, and 2025). Under his direction, MŌDAN offers a reservation‑only, two‑seating format, 5:30 PM and 8:30 PM, from Wednesday through Sunday.
The current tasting experience, titled “FREE HAND,” is an 11‑course menu priced at Php 7,500, available through September 2025. It embodies creativity unbound, inviting collaboration between intuition and technique to present flavors that are both bold and sincere.
Among its standout pieces is the daring Tamago‑yaki, a visually striking twist on a classic: the dish is wrapped in wagyu beef, eschewing the traditional egg‑roll appearance and offering a surprise at first glance.

Their previous course menu, Hit and Missed, also delighted and awakened taste buds with its playful contrasts of flavors and textures, weaving together unexpected pairings that challenged conventions while still celebrating the essence of Japanese cuisine.

MŌDAN maintains a strictly intimate ambience, seating only 13 guests in its minimalist dining space, though it can accommodate a 14‑person party when fully booked. Built around neo‑traditional Japanese techniques and using both local and Japan‑sourced ingredients, the restaurant crafts a tasting experience that is both innovative and rooted in respect for culinary heritage.
