    One of its highlights is its view of Manila Bay, which adds to the restaurant’s charming setting. With its thoughtful menu, Rossini presents Italian classics in a way that remains rooted in tradition while appealing to contemporary tastes.

    Rossini is a modern Italian restaurant, offering fresh handmade pasta and Napoletana-style pizza alongside modern interpretations of Italian classics in a refined yet casual setting. The brand relaunched under a new team in October 2023, introducing a refreshed concept that reflects Rossini’s evolving direction.

    At the heart of its menu is Rossini’s pizzas, which stay true to the Napoletana style. Rossini’s pizzas feature a soft, airy crust with a light chew and a delicate, slightly crisp base. The dough is made using Caputo “00” flour at 64% hydration, resulting in a well-balanced structure and subtle base flavor.

    A combination of imported Italian ingredients and locally sourced products is used to maintain both authenticity and freshness. Pizzas are baked in an electric oven for approximately 4 to 5 minutes, producing a well-risen cornicione with light charring (“leopard spotting”) and an evenly baked crust. The overall approach emphasizes balance, simplicity, and clean flavors, staying true to the essence of Neapolitan pizza while adapting to modern taste buds.

    This philosophy is reflected in Rossini’s selection of recommended dishes. Among its standouts is the Rossini Pizza, Rossini’s signature cream-based pizza topped with seared foie gras, fig jam, mixed cheese, and arugula. Rich yet balanced, it offers a distinctive combination of savory and sweet flavors.

    Another highlight is the Burrata Margherita Pizza, a tomato-based pizza topped with mozzarella cheese, burrata cheese, and fresh basil. The addition of burrata gives the classic favorite a richer and creamier finish, while the fresh basil brings a bright note that keeps the flavors well-balanced.

    For those who prefer a more classic option, the Margherita Pizza features the timeless pairing of tomato, mozzarella cheese, and basil. Rossini also highlights other signature Napoletana-style pizzas such as the Seafood Aligue Pizza and Capricciosa Pizza, among others.

    An Italian restaurant is not complete without its own housemade pasta, and Rossini further showcases its kitchen through creations such as the Tagliatelle with Shrimp and Crab Meat. It is made with fresh housemade tagliatelle pasta with crab meat, shrimp, anchovies, pomodoro sauce, and cream.

    Other recommended pasta dishes include the Salmon Wafu Pasta, Truffled Taglierini Rossini, and Spaghetti Alla Vongole.

    In addition to pizzas and pastas, Rossini’s menu also features various Italian classics from Eggplant Parmigiana, Mixed Cheeses and Salami Samplers, Fried Gnocchi in Pesto Cream, Valdostan Salad, Minestrone Soup, Porcini Truffle Risotto, Roasted Barramundi, Salsa Rosso Steak, Tiramisu alla Rossini, and more. This range gives diners a broader taste of the restaurant’s Italian offerings beyond its signature specialties.

    For gatherings and private occasions, Rossini provides a comfortable dining setup with seating for 50 guests indoors and 24 guests outdoors, with the latter offering views of Manila Bay. While there is no bar seating, the restaurant also has one private room that can accommodate up to 20 guests, also facing Manila Bay.

    Behind the menu is a kitchen team trained in traditional Italian techniques under a seasoned Italian chef during Rossini’s early years. While the chef is no longer part of operations following the 2023 acquisition, the local kitchen team continues to uphold Rossini’s Italian foundations through its current menu.
