Founded by Chef Kevin David, a New York-trained chef with over 16 years of experience in prestigious kitchens across the U.S., Idalia reflects his culinary journey and philosophy. The restaurant’s name, derived from the Greek word meaning “behold the sun,” embodies its ethos of bold, ingredient-driven cuisine that honors the essence of each component.

The menu at Idalia is a showcase of Chef David’s fearless approach to culinary exploration. For an exciting start, try the Smashed Cucumber Salad (Php 430) pairs cucumbers with wakame seaweed, roasted sesame dressing, and a touch of gochugaru, an invigorating combination that sets the tone for the rest of your meal.

Next, the Malfadine highlights a thoughtful balance of richness and freshness. The ribbon-like pasta is coated in a fragrant basil-cashew pesto, then layered with creamy local burrata and finished with shavings of pecorino romano. The result is a comforting yet refined dish, where nutty, herbaceous, and milky notes come together in every forkful.

Lastly, indulge in the 10-Day Dry Aged Duck, a dish designed for sharing. Carefully aged to deepen its flavor, the duck is served alongside a tender duck leg confit and finished with a glossy apple-duck jus that adds a subtle sweetness to its rich, savory profile. It is a hearty and satisfying finale to the meal.

Idalia’s interior is equally captivating, seamlessly blending modern design with industrial elements to create an inviting yet sophisticated atmosphere. The open kitchen concept allows diners to witness the culinary artistry firsthand, adding another layer of enjoyment to the dining experience.
