  • DIP Nikkei at Sheraton Cebu Mactan Resort is known as Cebu’s first dedicated Peruvian-Japanese dining experiences to the island. Adding to its growing reputation, the restaurant was recently recognized as a Michelin Selected 2026 establishment in the first-ever Michelin Guide selection for the Philippines.

    DIP Nikkei is one of the first restaurants in Cebu to specialize in Nikkei cuisine, a culinary style created decades ago by Japanese immigrants in Peru that combines Japanese cooking techniques with bold Peruvian flavors and spices.

    One of its standout dishes is the Tuna Tamarind Ceviche Nikkei (Php 720), made with tamarind ponzu tiger milk, kyuri, avocado, sesame seeds, and sesame oil. The dish delivers bright acidity and fresh flavors while incorporating rich and nutty notes.

    For those looking for a heavier main course, the restaurant offers the 16H Cochinillo Lechal Confit (Php 1,800), featuring 16-hour confit suckling pig, teri-miso glace, sweet potato puree, pak choi, and Grana Padano. Crispy on the outside and tender inside, the dish combines savory, sweet, and umami flavors.
