Opened in December 2024, Ishtar first welcomed guests through its bar. In less than a month, the dining side followed, fully unveiling the concept as it stands today. The idea of creating a neighborhood pub had long been in the works, and when the ground-floor space at Vernida IV became available, the opportunity was simply too good to pass up.

Though many assume the name references the Mesopotamian goddess of love and war, the real story is more personal. Ishtar was inspired by the 1987 film of the same name starring Dustin Hoffman and Warren Beatty, a favorite of owner Marla Moran’s father. That touch of nostalgia gives the pub an added layer of warmth, something that carries through its food, drinks, and atmosphere.
As a sister brand of Café Mediterranean, Ishtar shares familiar flavors beloved by longtime patrons, yet it introduces something new to both the brand and the Salcedo community. The menu draws inspiration from across the Mediterranean, with a strong focus on Spanish tapas and West Asian entrées.
Among the must-try dishes is the Harissa Grilled Wings, a plate of six chicken wings marinated in mild harissa paste and grilled over an open flame. Served with house-made hot sauce, it is the kind of dish that pairs naturally with one of the pub’s signature cocktails.

For those seeking something lighter yet satisfying, the Crispy Balsamic Tofu, Quinoa, and Hummus Bowl delivers a balance of sweet and savory flavors. The tofu, glazed in balsamic vinegar, rests on a bed of fluffy quinoa salad and hummus, accompanied by pita bread, a consistent favorite among diners craving a healthier option.

The Ishtar Burger offers a Mediterranean spin on a classic. Its spiced beef and lamb patty is grilled over an open flame and layered with lettuce, tomatoes, and grilled onions, resulting in a bold and hearty bite.

At the bar, creativity shines just as brightly. The Constantinople is an herbal, fresh cocktail blending bell pepper, tequila, mezcal, and vermouth. It reflects the influence of head bartender Simon, who trained under internationally awarded bartender Arcadius Rybak and helped curate the pub’s signature drinks.

Behind the kitchen are Chef Paolo, with nine years of experience, and Chef Russel, with 14 years of experience. Both spent years honing their craft at Café Mediterranean before joining Ishtar from day one. Drawing from their foundation, they preserve the classics while introducing new entrées, desserts, and cocktails that elevate the concept further.

Located at the ground floor of Vernida IV, Ishtar is accessible via 128 L.P. Leviste Street, next to Tomono Kissa, or through San Agustin Street in Salcedo Village.
The bar area can accommodate 30 guests, the dining room seats 50, and the function room can fit 12 guests. There is also an al fresco area ideal for 10 guests. The venue is equipped with a sound system, microphones, and a projector, making it well-suited for private functions, celebrations, and creative gatherings. Rates vary depending on the day and time.

Looking ahead, Ishtar aims to grow as a cultural venue, featuring more live music and local artists, particularly on Saturdays.
