Asador de Aranda is set to open in May 2026 at the Ground Floor of EcoPlaza Building in Makati, bringing its signature Castilian dining experience to Manila.

Known for shared plates, fine wine, and traditional Spanish cooking, Asador de Aranda traces its roots to Spain’s Castile region and has built its reputation around wood-fired roasting. Founded 40 years ago in Madrid’s Plaza de Castilla, the restaurant has since expanded with multiple branches across Spain and the Middle East, and is now opening its first Southeast Asian branch in Makati.

At the center of its menu is Lechazo Asado, the restaurant’s signature dish and a staple of traditional Castilian cuisine. The dish features suckling lamb roasted for hours in clay dishes inside wood-fired ovens, using a traditional cooking method that highlights the natural flavor and tenderness of the meat.

The restaurant follows a classic Castilian technique that relies on simplicity, using minimal ingredients alongside clay pots and wood-fired ovens to preserve the quality of the lamb. Its suckling lamb is raised through free-grazing methods and fed exclusively on its mother’s milk, resulting in tender meat known for its delicate texture and rich flavor.
