  • FLOW is a fine dining concept shaped by intention, storytelling, and cultural exploration. Located at Green Sun Hotel, Makati , FLOW presents a Peruvian-Filipino tasting menu that thoughtfully bridges Latin America and Southeast Asia, drawing connections between two cultures deeply rooted in land, craft, and memory.

    At the core of FLOW’s philosophy is movement. The restaurant draws inspiration from two of the world’s 17 megadiverse ecosystems—Peru and the Philippines—reimagining their indigenous ingredients through the lens of biomes, landscapes, and local narratives.

    Each course explores a place where these two countries sit side by side, revealing shared traits, parallel histories, and a deep respect for nature. Traces of the natural linger in both narrative and flavor, unfolding gradually onto the palate.

    In this culinary biome, every ingredient has a purpose. Nothing exists without intention. From produce sourced from local wayfarers of the soil to seafood gathered by those who sail endlessly for the perfect catch, FLOW honors not only the ingredient itself but the journey behind it.

    The experience is further grounded through collaborations with local artisans, who craft custom dinnerware that carries the cultures, landscapes, and stories woven into each dish—extending the narrative from plate to table.

    Leading the kitchen is Chef Kevin Uy, whose culinary journey is deeply intertwined with Peru. He spent five years training under Chef Virgilio Martínez and Pia León at Central, the world-renowned restaurant ranked number one by The World’s 50 Best Restaurants.

    Alongside him is Co-Executive Chef Gabriel Ong, whose experience spans some of the world’s most respected kitchens. Ong has worked at Alain Ducasse at Morpheus in City of Dreams, Macau, and Amber at The Landmark Mandarin Oriental in Hong Kong—two- and three-MICHELIN-star restaurants, respectively.
