Pizza Studio Tamaki in Makati: The Newest Tokyo-Napoli Style Pizzeria in Town
Tokyo’s cult-favorite Pizza Studio Tamaki (PST) is set to fire up Manila’s pizza scene with a much-anticipated debut at The Restaurants at Ayala Triangle Gardens this October 11, 2025!

The award-winning PST from Tokyo is famed for its wood-fired Tokyo Napoli-style pizzas. Each pizza is baked in the custom Tamaki oven to achieve a soft, chewy, perfectly charred crust in minutes. The result is a “Japanese pizza style” made from their Tamaki original pizza flour blend.

Behind PST is Chef Tsubasa Tamaki, whose PST Tokyo branch was hailed No. 10 in the world for The Best Pizza 2025. “Our pizzas are a bit different. You’ll notice it the moment you try one. They have a distinct Japanese touch. My hope is that this new style of pizza will gradually become familiar and loved here in the Philippines,” Chef Tamaki shared.

When asked why he chose pizza as a business, Chef Tamaki replied, “I’ve studied many cuisines—Japanese, Spanish tapas, and more, but Italian food feels accessible, casual, and inviting. And pizza, in particular, is universally loved. People of all ages, from every background, enjoy it. That’s why I believe pizza holds such strong potential as a global business.”
Together with Chef Hiromi Nakada, Chef Tamaki brings his signature craftsmanship to PST in Makati.

To start, we tried the 5 Kinds of Appetizer Sampler to whet our appetite. This thoughtfully curated medley of hot and cold appetizers offered a delightful variety of flavors and textures. It includes Octopus and Celery in Lemon Marinade, Balsamic Marinated Pumpkin, Chicken Breast Aromatic Vegetables in Mustard, Eggplant Puttanesca, and Meatballs in Tomato Sauce.

This is a great prelude to Tamaki’s tomato-based pizza, aptly named Tamaki, topped with smoked mozzarella, Pecorino Romano, and fresh basil. The result is a harmonious balance of flavors. The rich, smoky creaminess of the mozzarella blends beautifully with the sharp, salty notes of the Pecorino Romano, while the fresh basil adds a fragrant, herbal brightness.

Pro-Tip: To savor its tomato flavor even more, gently smush the cherry tomatoes on top of the pizza and spread them evenly over each slice, letting their natural juiciness mingle with the melted cheese for an extra burst of freshness in every bite.
End your meal on a sweet note! Try the Tiramisu (Php 520), featuring rich coffee notes and a soft, moist texture that melts in your mouth. For a lighter finish, try the Panna Cotta with Berry Sauce (Php 380), delicate and creamy with a bright, fruity touch.

To date, PST has eight locations worldwide, including Japan, and is on track to open its 10th store this year. In Southeast Asia, the brand is already present in Singapore, Thailand, and now the Philippines.
Chef Tamaki shared that they are planning several new openings in the coming months, starting with Niseko and New York in December, followed by Australia in February, and Taipei, Indonesia, and Hong Kong in April. The New York branch will be located near Times Square, reflecting his vision of bringing Japanese-style pizza to cities across the globe.
