Elbert’s Steak Room was established in August 2007 by Mr. Elbert Cuenca, who had previously been involved in Japanese dining concepts such as Furusato and Zen in 1995, as well as the high-concept Restaurant12 in 2002.
The restaurant was originally created as a discreet dinner-only dining room focused on serving USDA Prime grade steaks, eventually becoming one of Makati’s well-regarded destinations for refined steak dining.
The steaks remain the highlight of Elbert’s Steak Room’s menu. While selections ultimately depend on personal preference, lunch introduces a refined classic in the form of the Prime Rib au jus, made from slow-roasted USDA Choice grade bone-in rib-eye. The course lunch begins with either the soup of the day or a salad, followed by the prime rib served with horseradish cream and its signature au jus.

Guests may choose their preferred portion, with the King’s Cut (280g minimum) priced at Php 3,600, the English Cut (180g minimum) at Php 3,000, and the Queen’s Cut (150g minimum) at Php 2,400.
Complementing the main are indulgent side dishes, from which guests may choose one, such as truffled mashed potatoes, creamed spinach, baked potato topped with sour cream, chives, and bacon bits, as well as steamed buttered vegetables, and pommes fries. The course is then rounded out with dessert and a choice of coffee or tea.
What’s more, Elbert’s Steak Room also has a Prix Fixe Lunch Menu composed of beef, sandwiches, burgers, and other plates for guests to enjoy.
Interestingly, the restaurant’s lunch offerings began about six months after opening, when the kitchen had accumulated a generous amount of steak trimmings. Instead of letting them go to waste, Elbert’s Steak Room used these premium trimmings to create its burger patties, made with a blend of different beef cuts for a balance of texture and flavor.
A prime example is the Classic Prime Burger served with pommes fries. You may choose from a variety of cheeses including Gruyere or English Cheddar, and Russian dressing is also optional.

Available only during lunch service from Mondays to Fridays, the burgers are served as part of a prix fixe set meal. Each burger uses a soft potato brioche bun and keeps the toppings simple, with cheese, lettuce, tomato, and raw onions, allowing the beef itself to remain the focus.
The same burger blend is also used in comforting lunch dishes such as the Umami Burger Steak, served with soy steak sauce, shiitake mushrooms, organic poached egg, and rice, as well as the Salisbury Steak, finished with mushroom gravy and served over mashed potatoes.

In the evening, guests may also enjoy burger sliders at the bar below the restaurant, served with shiitake, truffle mayo, caramelized onions, and lettuce in a soft dinner roll.

For dinner, the USDA “Super” Prime Ribeye (Php 8,000) and the USDA Double Gold Filet Mignon (Php 6,000), both broiled medium rare to perfection, are among the most sought-after selections.

For those dining with a partner or in a group, the USDA Prime Grade Tomahawk Ribeye (for two: Php 12,000; for three: Php 17,000; for four: Php 20,000) and USDA “Super” Prime Grade Porterhouse (for two: Php 13,000) are perfect for sharing. The former, which has a long bone resembling a tomahawk axe, is packed with rich, juicy meat due to its extensive marbling.

The USDA “Super” Prime Grade Porterhouse, on the other hand, is a combination of two steak cuts: tenderloin and strip. This means diners get the best of both worlds—a tender, buttery filet mignon on one side and a flavorful, firmer strip steak on the other. Its large size makes it ideal for sharing, allowing guests to enjoy a variety of textures and flavors in one sitting.

Behind the kitchen is Executive Chef Adrian Cuenca, who started working at Elbert’s Steak Room in 2007 as a cook and steadily worked his way up over the years to become Executive Chef. His long experience within the restaurant helps maintain the consistency and focus that Elbert’s has become known for.

Meanwhile, those who wish to enjoy their steaks in a more intimate setting may reserve one of the restaurant’s two private rooms. The mini private room accommodates up to six guests, with a minimum consumable fee of Php 15,000 for lunch and Php 30,000 for dinner.

The larger private room, on the other hand, can host up to 14 guests, with a minimum consumable requirement of Php 25,000 for lunch and Php 50,000 for dinner.

The restaurant itself seats up to 54 guests across eight tables and the bar counter. Reservations are recommended, although walk-ins are welcome, and the dress code is smart casual.
