The Peak Grill is open daily from 5:30 p.m. to 11:00 p.m.

    Guests who want a curated dining experience may try The Peak’s Signature 5-Course Set Menu priced at Php 4,465 net per person. The menu features refined dishes such as Italian Burrata, Charred Corn Soup, Patagonian Toothfish, Australian Grass-Fed Tenderloin, and New York Cheesecake, offering a well-rounded experience that highlights the restaurant’s balance of fresh produce, premium proteins, and elegant plating.

    One of its must-try seafood offerings from the Crudo Bar is the Freshly Shucked Irish Gallagher Oysters.     About the Chef

    Behind The Peak’s kitchen is Chef Mark Zaragoza, whose career reflects international experience, discipline, and a deep commitment to excellence. He began his culinary journey at The Tasting Room in Manila, where he developed refined techniques and a strong foundation in modern gastronomy.

    His international experience includes working at Gordon Ramsay’s restaurant at St. Regis Doha and Jason Atherton’s venue in Dubai, where he honed his precision, creativity, and understanding of global hospitality standards.

    Chef Mark later joined Hyatt through Grand Hyatt Dubai, further strengthening his expertise in large-scale luxury operations. In 2018, he returned to Manila as part of Grand Hyatt Manila’s pre-opening team, later leading The Cellar and mentoring Chef Diorella “Gadz” Ong. He also contributed to the pre-opening of Grand Hyatt Kuwait before returning to Manila to lead The Peak once again.

    At The Peak, Chef Mark continues to elevate the restaurant through a robust beef program, seasonal seafood offerings, and dynamic menu changes. His leadership is hands-on, grounded in mentorship, operational discipline, and uncompromising standards even during high-volume service. His culinary direction has helped position The Peak as one of the city’s leading luxury grill destinations.

    Peak Hours at The Peak 

    As the evening unfolds, guests can enjoy live entertainment at The Music Lounge, adding a vibrant touch to the already sophisticated ambiance. The lounge features live DJs from Tuesday to Saturday evenings, creating an energetic yet polished atmosphere for after-dinner drinks, celebrations, or late-night gatherings.

    For intimate gatherings and private occasions, The Peak offers a variety of spaces across its elevated floors. The Grill can accommodate 179 guests, with 101 seats indoors and 78 seats outdoors.

    The Main Dining area can seat 50 guests, while the Speakeasy on the 62nd floor can accommodate 16 guests. The Whisky Room can seat 15 guests, the Veranda Al Fresco can accommodate 28 guests, and the Sunset Deck or Glass Room can seat 22 guests.
