    This is Papakape, housed in the 400-year-old Aljibe de la Fuerza, a former water cistern. The café seamlessly integrates the rich heritage of the Spanish colonial era with contemporary Filipino coffee culture, giving creative and flavorful twists to your usual cup of joe.

    Signature beverages available only at Fort Santiago include the Black Gulaman Americano, which combines espresso, pandan arnibal, grass jelly, and basil seeds into a refreshing and uniquely flavored drink.
