    The name Sampiro itself traces back to Makati’s early history. From the late 1500s until 1670, the area was under the care of Franciscan priest Pedro de Alfaro, who oversaw the construction of the parish church in 1620. When Makati later became an independent town in 1670, it was named San Pedro de Makati in honor of its patron saint. Over time, locals adopted the warmer and more colloquial name Sampiro—a reflection of familiarity, hospitality, and community.

    Founded by Ian Paradies, Nina Paradies, Alex Colombo, and Luis de Terry, Sampiro opened in 2023 as a relaxed yet thoughtfully curated dining space. Since then, Sampiro has grown into a go-to spot for casual lunches, intimate dinners, and social gatherings, striking a balance between approachability and quality-driven cuisine and cocktails.

    Located on the ground floor of the Escala Salcedo Building along L.P. Leviste, Sampiro enjoys a prime spot directly across Jaime C. Velasquez Park. The lush greenery of the neighborhood park provides an open, calming view that enhances the restaurant’s relaxed urban charm. Inside, the space is designed with warm art deco influences, clean lines, elegant curves, and understated glamour that evoke the spirit of classic city dining while maintaining a contemporary ease.

    Sampiro’s offerings revolve around elevated bistro favorites, reimagined through an Asian-forward lens. Some dishes introduce thoughtful twists inspired by Asian flavors, while others remain classic European-leaning staples prepared with restraint and precision.

    Together, the menu reflects Sampiro’s Asia-meets-World approach to modern bistro cooking—an approach that allows the restaurant to feel both globally inspired and comfortably familiar.

    Among Sampiro’s standout dishes is the Bone Marrow & Mushroom Rice. Fragrant fried rice is studded with tender beef tenderloin and earthy mushrooms, then brightened by tangy pickled onions.

    The dish is layered with crispy enoki mushrooms, golden breadcrumbs, and fried garlic that add both crunch and depth. At the center sits roasted bone marrow, lending a rich, buttery finish that ties every element together in each satisfying bite.

    For something vibrant and refreshing, the Kingfish Kilawin offers a modern interpretation of a Filipino classic. Cured kingfish rests atop a bright, tangy leche de tigre, accented with bursts of grilled pineapple, crisp cucumber, and pickled onions with dots of silky sweet potato purée, creating a vibrant, balanced, and modern take on a Filipino classic.

    To conclude the meal, the Calamansi Meringue provides a bright and refreshing finale. Smooth calamansi curd brings a lively citrus tang that is layered with delicate sheets of crisp meringue.

    Fresh mangoes and juicy blueberries add natural sweetness, while a subtle hint of basil introduces an unexpected aromatic note. The result is a dessert that is sweet, tangy, and gently savory, a light yet satisfying way to end the meal.

    Overseeing the culinary direction of Sampiro is Chef Luis de Terry of Dark Wing Inc., who leads the restaurant’s kitchen with a bold and inventive approach to flavor. Describing his philosophy as “the wrong spice in the right dish,” Chef Luis brings a confident and flavor-forward sensibility to the menu.

The restaurant is available for exclusive full-venue bookings, accommodating up to 96 guests across its indoor and al fresco spaces, making it ideal for parties, special occasions, and memorable events.

    For those seeking a more intimate setting, the al fresco area may be reserved for up to 16 guests, offering a relaxed atmosphere by the park. Rates and booking arrangements are tailored to each occasion, allowing Sampiro to shape the experience around the moment being celebrated.
