Goxo in Makati: Inside the City’s Exclusive 12-Seat Spanish Concept
Goxo is a 12-seater, reservation-only asador restaurant, offering an exclusive and highly curated dining experience in Manila. It is the latest concept by the group behind two of the city’s popular Spanish dining destinations, Bar Pintxos and Txoko Asador—an ode to the “Bar” of Bar Pintxos and the “Asador” of Txoko Asador, seamlessly distilled into one cohesive concept.
The restaurant was awarded the MICHELIN Selected distinction, recognizing its refined culinary direction, thoughtful execution, and consistently high-quality dining experience.
Goxo comes from the Basque word meaning “delicious,” paying tribute to timeless Spanish recipes influenced by food cultures around the world.

At the heart of the experience is its prix-fixe menu, designed in a flexible format that allows diners to freely combine selections from several dishes.
Leading the kitchen is Chef Albert Mendoza, who previously served as a Research & Development chef at Bar Pintxos and later as executive chef at Txoko Asador. Bringing his wealth of experience to Goxo, Chef Mendoza presents a menu that highlights refined techniques and thoughtful flavor pairings.
Among the recommended dishes is the Jamon, which brings together talakitok and compressed melon with stracciatella, a milk gelato. Almond is also added to the medley, providing a contrast of flavors and textures that will leave you wanting more.

The Tartare features finely prepared pompano enhanced with kalamansi kosho. The citrus brightness of the calamansi adds lift to the dish, cutting through the natural richness of the fish, while the kosho or pepper lends subtle warmth, creating a fresh, well-balanced flavor profile.

Another standout is the Crab Uni & Anchovy, presented as an udon dish that layers the briny sweetness of crab paste with the pronounced umami of sea urchin and anchovy.
