    Originally from Hong Kong, chef Jereme Leung has curated a concept that redefines traditional Chinese flavors through contemporary techniques, elegant plating, and refined ingredients, all while staying rooted in authenticity.

    The restaurant is owned and managed by SM Hotels and Conventions Corp. (SMHCC) in partnership with Hilton Worldwide. China Blue is not only recognized for its distinctive blue-and-white interiors and stunning chandeliers, but also for being one of the first fine-dining Chinese restaurants in the Philippines to offer a full-service experience crafted by chef Jereme Leung.

    Headed by executive chef Eng Yew Khor, China Blue by Jereme Leung is famous for his signature Deep-Fried Prawns with Wasabi Mayonnaise and Fresh Mango Salsa (Php 1888). The prawns are lightly battered, fried, then tossed in a creamy wasabi-infused mayonnaise and paired with a mango salsa. It’s a playful harmony of sweet, tangy, and spicy flavors, and a favorite among first-time and returning guests alike.

    China Blue’s Seafood Fried Rice with Signature XO Sauce (Php 700) is a sumptuous rice dish you can eat on its own, thanks to its rich and complex flavors. Every grain of rice is perfectly fried and infused with the XO sauce, a gourmet seafood condiment from Hong Kong known for its depth of flavor. The harmonious medley of seafood and vegetables make it a great option for those seeking extraordinary fried rice.

    The dim sum selection at China Blue is a delightful showcase of traditional and contemporary Chinese culinary arts. A fine example would be the Golden Black Truffle Mushroom Buns (Php 688/3 pcs), a signature dim sum item that combines the earthiness of black truffle with the umami richness of mushrooms, encased in a soft, golden-hued bun. Lightly crisp on the outside and pillowy inside, it elevates the humble bao into a gourmet experience.

    Their take on Signature Peking Duck Two Ways (Php 5800 good for 4-6 persons) is a masterpiece of flavor and presentation. Prepared using traditional methods and roasted to perfection, its Signature Peking Duck is served tableside for an elevated dining experience. The first course features the crispy duck skin carved and wrapped in homemade pancakes with scallions, cucumber, and hoisin sauce. The second course offers your choice of preparation:

    • Wok-fried Duck with Lettuce Wraps;
    • Minced Duck with Fried Rice; or
    • Duck Soup with Tofu and Vegetables.

    Meticulously cooked and beautifully presented, this dish is ideal for special celebrations or indulgent gatherings.

    Your Chinese dining experience would not be complete without a cup of tea. Try China Blue’s wide selection of authentic Chinese tea, a perfect drink for their well-prepared specialties including appetizers and specialty cold dishes.

    Additionally, China Blue also offers a live seafood option wherein you get to choose your preferred cooking method for your chosen seafood dish. You can choose from fried in spicy chili sauce, stir-fried with signature XO sauce, golden broth, and glass noodles, stir-fried with crispy garlic shallots and many more!

    While enjoying China Blue’s gastronomic specialties, witness breathtaking views of Manila Bay at their floor-to-ceiling glass windows. China Blue highlights its elegant interior and cozy furniture—making it an ideal place to relax and dine.

    Further, China Blue also has five private and semi-private rooms that can accommodate 8-30 guests, perfect for small and big gatherings and celebrations. Rates range from Php 20,000 – 100,000 nett.
