The Test Kitchen Manila Named One of CNN’s Best New Restaurants
CNN Global has announced its 20 Best New Asia-Pacific Restaurants in 2020 and it includes The Test Kitchen Manila in One Rockwell, Makati. This restaurant is a homegrown concept by The Bistro Group’s very own Corporate Executive Chef Josh Boutwood.

The Test Kitchen started in Kamagong Street where Bistro Academy is located. Diners are limited to 18-20 pax and would eat right beside the kitchen where they also cure their ingredients for up to three months!
CNN was most interested in The Test Kitchen’s principle of time as an ingredient. They quote Chef Boutwood saying it so, “Time is an ingredient. We want to make sure that we use techniques that amplify the flavor and not hide it.”

After closing for over a year, Test Kitchen reopened in their current home in Rockwell, Makati late last year. They are now offering an à la carte menu created during their year-long hiatus but still retaining the idea of time as an ingredient with curing, aging, and fermenting many of their ingredients.
With a total of 46 seats, the restaurant has dim lighting with a single light on the table highlighting the dishes presented. Diners are sure to be served something new and innovative made from the best local ingredients every visit.

Other restaurants being managed by Chef Boutwood are Savage and Helm in Taguig. Both are Chef Boutwood’s brainchild to serve innovative dishes that challenge our thinking of food.

The Test Kitchen is the only Philippine restaurant on the CNN list which includes the kaiseki restaurant Kinu by Takagi in Thailand, the underwater restaurant Koral in Indonesia, and MONO in Hong Kong.
