  • Customers got to experience how to be a chef at Fukudaya’s Sushi 101 held last November 18, 2018 at Arya Residences, Bonifacio Global City, with the next session happening on December 16, 2018.

    On this rare occasion, the restaurant becomes a learning place for small groups to learn how to make a sushi–Japan’s national dish.

    Open for all ages, foodies can learn how to make their own sushi at home

    The previous Sushi 101 was held last September 2, wherein Fukudaya Chefs, including Head Chef Oki showed how to make temaki, a cone-shaped sushi and nigiri sushi, raw fish meat over rice. Both adults and children attended the event and successfully created their own sushi to enjoy by themselves or with their families.

    For the Sushi 101 on November 18, the group learned makizushi or the rolled sushi. With the basic ingredients such as sushi rice, nori (seaweed), wasabi, the group learned to roll a sushi using the makisu, a bamboo rolling mat.

    Chefs and instructors will guide attendees step-by-step for them to learn the proper way of sushi

    The Fukudaya chef started with the most basic sushi roll, which is the hosomaki (thin roll) sushi with a single cut of cucumber, and another roll with tuna filling. As the group learned the basics, the lesson stepped up to uramaki or the inside-out roll, such as the ebi tempura (breaded shrimp) uramaki, and the California Maki.

    Per roll, the hosomaki produces six pieces while the uramaki must be cut into eight uniform pieces to be eaten in one bite

    During the session, the group learned which side of the nori to use, how much rice is used per roll, how to use the makisu, how to cut the sushi roll, as well as how to make sushi rice with rice vinegar.

    The group went home feeling accomplished with their own creations, new knowledge, new skills, and a Fukudaya Certificate.
