True to its philosophy of delivering “real Japan” overseas, Ramen IBUKI imports many of its core ingredients directly from Japan while the noodles are freshly made in-house, ensuring consistent texture and quality in every bowl. Even the bowls used for serving are traditional Arita ware, known in Japan for their durability and elegant craftsmanship.

Every part of the operation is carefully systemized—from precise ingredient measurements to plating and service flow—to maintain the same standard. Rather than focusing on the heavy pork-based broths commonly found in many ramen shops, Ramen IBUKI highlights carefully layered soups built around creamy chicken paitan and deeply umami seafood dashi.

Among their signature dishes is the Tori Foam Ramen (Php 560) featuring a rich and creamy chicken paitan broth that has been slowly simmered to extract deep flavor and natural collagen. The soup is topped with a light foam that enhances its silky texture, creating a smooth, luxurious mouthfeel with every sip. The broth coats the noodles beautifully, delivering a comforting yet refined taste that highlights the richness of chicken without being overpowering.

The Dashi Ramen (Php 490) is made with a carefully prepared seafood-based dashi, this ramen offers a clear yet intensely flavorful broth. The soup carries layers of umami drawn from fish and other ocean ingredients, resulting in a clean, aromatic profile that feels light on the palate while remaining deeply satisfying. It is a bowl that emphasizes subtlety, balance, and the natural essence of Japanese soup-making.

Their Shell Dashi Ramen (Php 490) is a delicate variation of the seafood broth, this ramen incorporates scallops to introduce a gentle sweetness that rounds out the savory dashi base. The scallop infusion adds depth and elegance, creating a broth that is both comforting and complex, with a lingering umami finish that enhances each bite of noodles.

Ramen IBUKI’s Philippine debut is made possible through a partnership with Vikings Group, a major name in the local food and beverage industry known for launching and managing diverse restaurant concepts across the country. The collaboration was inspired by the group’s appreciation for IBUKI’s dashi-centered ramen style, which offers something distinct.

More than just another ramen shop, Ramen IBUKI offers a thoughtfully crafted ramen experience that focuses on depth of flavor, authenticity, and precision. For diners seeking Japanese ramen that goes beyond the usual, Ramen IBUKI delivers creamy paitan broths, refined seafood dashi, handmade noodles, and an immersive ramen bar atmosphere.
