  • The vibrant spirit of Filipino mixology will take center stage as Metro Manila hosts the first-ever Philippine Cocktail Fiesta, a city-wide celebration bringing together nearly 100 bars from November 17 to 23, 2025. Designed to showcase the innovation, talent, and regional diversity of the country’s bar scene, the event positions the Philippines among Asia’s rising cocktail capitals.

    Organized by DrinkCollectiv.com, the country’s pioneering drink-focused publication, together with DBWY (Drinks Be With You)—a community dedicated to uniting bartenders and enthusiasts—the Fiesta aims to build a stronger, more collaborative bar culture. The majority of international guests and activities will be hosted by Solaire Resort Entertainment City, the event’s Official Host Partner.

    Throughout the week, guests can look forward to an exciting lineup of bar shifts, cocktail pairing dinners, guest bartender takeovers, and industry-focused masterclasses. Nearly 100 venues across Makati, Bonifacio Global City, Quezon City, San Juan, Marikina, Alabang, and Entertainment City will participate in this week-long celebration, offering immersive experiences that showcase the depth and vibrancy of the country’s cocktail culture.

    Top bars from across the Philippines, including Cebu, Dumaguete, Iloilo, Palawan, La Union, Siargao, Cagayan de Oro, and Davao, will also fly in, highlighting the country’s regional ingredients, hospitality, and evolving cocktail identity.

    The Philippine Cocktail Fiesta will feature an impressive roster of local and international bartenders from celebrated bars across Asia, including Taiwan, India, Hong Kong, Singapore, Malaysia, Indonesia, and Beijing.

    The lineup includes multi-awarded names such as Lorenzo Antinori of Bar Leone (Hong Kong), Yangdup Lama of Sidecar (India), and Antonio Lai of Quinary and The Opposites (Hong Kong), among others. These collaborations aim to encourage knowledge exchange, elevate local standards, and strengthen the Philippines’ presence on the global bar stage.

    A series of cocktail-pairing dinners will further enrich the celebration, featuring collaborations between regional restaurants and award-winning bars.

    Highlights include a five-course pairing by Bar Leone at Solaire’s Finestra, Three X Co’s menu at Uma Nota, a collaborative dinner at Café Fleur in Alabang, and specialty cocktail-driven dining experiences by notable bartenders such as Amanda Wan, Nono Yu, Mark Lloyd, and Nitin Tewari.

    Industry professionals and enthusiasts can also attend exclusive talks, brand sessions, and masterclasses, covering topics such as Philippine spirits, cocktail creation, building brand value, sustainability, and the importance of community in shaping thriving bar cultures. Discussions will feature leading voices from Asia’s most influential bar festivals and institutions.

    To enhance the experience, the Fiesta introduces The Fiesta Passport, a week-long access kit priced at Php 1,800, offering exclusive promos, drink deals, freebies, and perks across participating bars.
