  • As one of the major activities Hilton Manila has set for the 100th year anniversary celebration of Hilton Hotels around the world, they recently welcomed Hilton Kuala Lumpur’s executive Chinese chef Chef Lam Hock Hin to its sophisticated Chinese restaurant Hua Yuan – Brasserie Chinoise to do an exclusive collaborative menu of authentic Shanghainese and Cantonese cuisines.

    The Malaysia-born Master Chef Lam brings a wealth of culinary experiences refined in the woks of Hilton Hotels for over 15 years now. He is the helm of Hilton Kuala Lumpur’s highly-acclaimed restaurant called “Chynna,” which has grabbed multiple awards in the Malaysia International Gourmet Festival.

    Internationally recognized for his expertise in authentic Chinese cuisine inspired from the finest of local ingredients, Chef Lam takes pride in his signature traditional Cantonese cuisine and modern cooking techniques which adds flair and a depth of flavor to each dish.

    Four Hands Culinary Series: Flavors of China

    Starting May 30 until June 8, you can indulge in a special 8-course Exquisite Collaborative Dinner menu prepared by the award-winning Chef Lam together with Hua Yuan’s Sous Chef Kevin Xu that will feature some of their signature Chinese dishes.

    The menu highlights Chef Lam’s well-loved dishes in Hilton Kuala Lumpur which includes the appetizer Mix Salad with Kaori Bako, Golden Scallops and Anchovies. You will be surprised at how overwhelmingly good the salad’s dressing is which gives this dish a spark of flavor from the onions, ginger, coconut, chili, and curry leaf.

    It is followed by the Double-boiled Black and White Garlic Soup with Sea Cucumber and Spare Ribs, a strong garlic broth with well-cooked sea cucumber and pieces of tender spare ribs. If you haven’t tried sea cucumber yet, it has a jelly-like structure and texture with a light fishy flavor.

    For the main course, one of Chef Lam’s most recommended dish is his Butter Milk Prawn with Egg Flakes and Scented Curry Leaves. Compared to other buttermilk prawn recipes, Chef Lam’s is much creamier but it doesn’t wash out the strong flavor of the prawn.

    It has the right crunch and subtle chili flavor, a reason why patrons of Chef Lam in Malaysia could not get enough of this dish!

    The last dish from Chef Lam is his Smoky Grilled Slice Pork with Leeks. Each slice of pork is infused with a strong smoky flavor and is tender enough that can be easily chewed on.

    Complementing Chef Lam’s wonderful dishes is Hua Yuan’s Shanghainese favorites prepared by Chef Kevin Xu. Hua Yuan’s very own Fragrant Tea-Smoked Duck is nothing like the usual roasted duck. Its aromatic smell from the tea and the crisp meat complements the sweet yet tangy plum sauce.

    Another seafood staple dish is the Deep Fried Grouper Sweet and Sour Style with Pine Nuts which can be perfectly paired with the spicy Fried Rice with X.O. Sauce.

    To end the meal on a sweet note, there is the Coconut Cream Jelly with Taro Balls and Peach Gum. It has a thick yet creamy coconut cream base similar to the Panna Cotta dessert and is topped with chewy taro balls and peach gum.

    This 8-course Exquisite Collaborative Dinner Menu Set is available for Php 2,888 net per person with a minimum of 6 diners. It can be ordered during lunch or dinner time at Hilton Manila’s Hua Yuan – Brassiere Chinoise restaurant from May 29 to June 8, 2019.
