Bloomberg’s lifestyle news and luxury reviews section Pursuits listed eleven food trends to watch out for this coming new year, and one of them is the “Explosion of Filipino Food.”
As described in the article, Filipino food is something to “get excited about,” as one of the original fusion cuisines which is a mix of Chinese, Spanish, Malay and other Southeast Asian influences.
The article also mentioned various Filipino restaurants abroad that gained attention, such as Washington’s Bad Saint and Manhattan’s Mission Chinese Food where native Filipino dishes like lumpia egg rolls (egg spring rolls) and pork belly with pork liver sauce are being served. It also mentioned Talde Miami Beach’s pork adobo (marinated pork) tamale offering.
Filipino cuisine was included in the list also because of the various major food conferences that took place in Manila, which brought the world’s elite chefs such as Andoni Luis Aduriz.
Aside from Chef Aduriz, celebrated chef Anthony Bourdain has visited Manila, and Michelin star chef Dalvid Oldani opened Foo’d just recently in Manila, too. Yet another Filipino culinary industry pride is Chef Margarita Fores, who was awarded as Asia’s Best Female Chef of 2016.
