  • For the first time, Manila is hosting the famed Madrid Fusión – the prestigious annual Spanish gastronomic festival where the most popular chefs from all over the world convene. It is also one of the world’s biggest and most forward-thinking culinary events, and has a solid 12-year track record of bridging together cultures through food.

    Sample the finest Filipino lechon and Spanish jamon in this year’s biggest gastronomical event. Visit the trade exhibit!

    Madrid Fusión this year is focused on the unique relationship of Filipino and Spanish cuisine, with its shared history in the country: a 300-year gastronomic journey, so to speak. It is currently held at the SMX Convention Center, and will run from April 24 to 28. Madrid Fusión has three landmark events: the International Gastronomy Congress, where multi-awarded local and foreign chefs present the history and future of food; the trade exhibit, where the best products and tastes in the market are showcased; and Flavors of the Philippine Festival, the launch of a month-long culinary feast of Philippine flavors in different markets, restaurants, bars, and malls all over the country. Expect a sampler of local staples such as lechon, longganisa, kinilaw, and different varieties of our finest local produce and delicacies.

    The congress is open to both professionals and amateur chefs and gastronomy enthusiasts who register and pay the delegate registration fees.
