Pizza dough is fermented for 54 hours before use, and all pasta is made by hand. The kitchen also dry-ages selected meats before serving them. Its Zabuton is aged for at least two weeks, while its lamb racks are aged for one week.<\/p>\n<p>For Osteria Antica, slow food is not simply a trend or a feature of the menu. It is the foundation of how the kitchen operates.<\/p>\n<h3>A Menu Guided by the Seasons<\/h3>\n<p>Osteria Antica does not limit itself to the cuisine of one particular Italian region. Instead, its menu is shaped by the quality and availability of produce. <strong>Chef Carlo Miguel<\/strong> believes that Italian cooking should place greater importance on ingredients than on complicated techniques.<\/p>\n<p>The kitchen seeks out ingredients at the peak of their season and handles them with as little interference as possible. It is simply finished with beurre mont\u00e9, chargrilled corn, and a small amount of Parmigiano Reggiano. The fish is filleted tableside and presented in two courses. After the first course, the remaining fish and bones are returned to the kitchen. He began his career in <strong>Sydney, Australia<\/strong>, where he spent 11 years progressing from apprentice to executive chef.<\/p>\n<p>During his time in Sydney, he worked in restaurants recognized by the Good Food Guide with one or two hats. The Australian guide uses hats instead of MICHELIN stars, with only a limited number of establishments receiving higher distinctions each year. He later served as executive chef of Sala and Sala Bistro from 2007 to 2010.<\/p>\n<p>He also became a chef-partner and part-owner in several restaurant and nightlife concepts, including Opus at Resorts World, 71 Gramercy, Draft, and The Brewery at The Palace. Chef Carlo later worked as corporate executive chef of Foodie Global, which handles concepts such as Mesa, Hawker Chan, Bench Caf\u00e9, and Tim Ho Wan.<\/p>\n<p>During the pandemic, he joined the cloud-kitchen company CloudEats, where he helped introduce brands including Burger Beast. He eventually moved to the Wildflour Group and joined in February 2025 specifically to open Osteria Antica, drawing from his extensive experience and specialization in Italian cuisine.<\/p>\n<p>Although Osteria Antica has received recognition from the MICHELIN Guide, Chef Carlo maintains that awards do not influence how the kitchen works. Instead, the team focuses on its diners, consistency, and the goal of becoming a little better with every service.<\/p>\n<h3>Private Dining and Reservations<\/h3>\n<p>Osteria Antica can accommodate approximately 110 to 120 guests indoors, or up to 130 guests when its outdoor seats are included.<\/p>\n<p>Its private dining room can accommodate 10 to 12 guests and requires a minimum spend of Php 35,000. During special occasions with set menus, such as Valentine\u2019s Day or Mother\u2019s Day, the reservation fee is equivalent to 50% of the applicable set-menu price.<\/p>\n<p>Through handmade pasta, long-fermented pizza dough, aged meats, and a menu that responds to the seasons, Osteria Antica stays committed to the fundamentals of traditional Italian cooking.
