<strong>oysters from Aklan<\/strong>, <strong>tiger prawns from Roxas<\/strong>, and <strong>chocolates from South Cotabato<\/strong>, among others, to create their signature tasting menu, complete from appetizer to dessert.<\/p>\n<p data-start=\"457\" data-end=\"859\">Other notable high-quality ingredients they uses to add rich flavors to their dishes are <strong><em>apahap<\/em>\u00a0 <\/strong>(Asian sea bass), featured in their <strong>Ceviche<\/strong>, as well as <em><strong>batwan<\/strong><\/em>, a type of local fruit used to add a sour flavor to dishes, in their <strong>36-hour <em>Kurobuta\u00a0<\/em><\/strong>(black pig)\u00a0cooked in <em>sinigang <\/em>(sour stew)\u00a0style.<\/p>\n<p data-start=\"86\" data-end=\"455\">The intimate 30-seat dining room recently added new seating times every Friday and Saturday!
