Well, back in the 1920s when there was a booze-ban in America, people still had secret bars around called “speakeasy” which was also known as “blind pig”. The owner wanted to retain the concept of people not wanting to get caught while drinking so The Blind Pig perfectly captures the essence of secrecy and exclusivity, creating an atmosphere that’s both timeless and intriguing.

As for the menu, it’s highly experimental where some are even modified requests of customers. They focus on comfort bites that are perfect to pair with cocktails, somewhere in between light and heavy. Note that they don’t serve dinner here, though.

Start with the crowd-favorite Rosemary Popcorn (Php 395) , which is just perfect for a light yet sophisticated snack.

Rosemary Popcorn / IMAGE from Philippine Primer

The Applewood Smoked Salted Egg Fish Skin (Php 395) , meanwhile, really gives off a strong seafood flavor, while the English Bacon Rolls (Php 630) gives off both salty and sweet flavor.

Applewood Smoked Salted Egg Fish Skin / IMAGE from Philippine Primer

You’ll definitely taste the bacon upon the first bite, but the dates inside it will melt in your mouth.
