With China being a vast land of varying geographies, cultures, and historical backgrounds, it is hard to truly tackle Chinese cuisine without getting a glimpse of the regional cuisines that make up the whole.<\/p>\n<p>We can start by enumerating the eight distinct culinary traditions of China\u2014Cantonese, Hunan, Fujian, Zhejiang, Anhui, Jiangsu, and Shandong.\u00a0We also looked into\u00a0cities outside the mainland\u2014like Hong Kong and Taiwan\u2014that have developed their own cuisine but still closely identify with Chinese cooking.\u00a0Chinese cuisine, after all, still has its staples: rice, noodles, and dim sum.<\/p>\n<p>In this feature, we look more closely at the Chinese restaurants in the metro and identify the cooking styles they have adopted.
