{"id":70379,"date":"2022-05-30T14:39:07","date_gmt":"2022-05-30T06:39:07","guid":{"rendered":"https:\/\/primer.com.ph\/blog\/?p=70379"},"modified":"2024-03-25T17:23:51","modified_gmt":"2024-03-25T09:23:51","slug":"lets-cook-shigeji-style-tantanmen-ramen","status":"publish","type":"post","link":"https:\/\/primer.com.ph\/blog\/lets-cook-shigeji-style-tantanmen-ramen\/","title":{"rendered":"Let&#8217;s Cook: Shigeji-Style Tantanmen Ramen"},"content":{"rendered":"<p><strong>Ramen<\/strong> is a Japanese noodle dish that features wheat noodles in a meat or vegetable-based broth garnished with a wide array of a series of toppings such as chashu (Japanese-style roasted pork belly), scallions, mushrooms, bok choy, soy sauce eggs, and seaweed.<\/p>\n<p>Below, you&#8217;ll find a classic ramen recipe, courtesy of Shigeji-san, that you can try at home.<\/p>\n<p style=\"text-align: center\"><img decoding=\"async\" class=\"aligncenter size-full wp-image-42481\" src=\"https:\/\/primer.com.ph\/food\/wp-content\/uploads\/sites\/4\/2022\/05\/shigeji-tantanmen.jpg\" alt=\"\" \/><span style=\"font-size: 10pt\"><em>Tantanmen ramen\/IMAGE from Philippine Primer<\/em><\/span><\/p>\n<p><strong>Also read: <a href=\"https:\/\/primer.com.ph\/blog\/2022\/03\/23\/irasshaimase-shin-mikana-philippines-opens-third-branch-in-araneta-city-cubao\/\">Shin Mikana Philippines opens third branch in Araneta City, Cubao<\/a><\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p><strong>Nikumiso (Braised ground pork seasoned with miso paste)<\/strong><br \/>\n100g minced pork<br \/>\n1 tbsp ginger, chopped<br \/>\n1 tbsp scallions, chopped<br \/>\nShaoxing wine or sake (according to taste)<br \/>\nDoubanjiang (according to taste)<br \/>\nOyster sauce (according to taste)<br \/>\nSesame oil (according to taste)<\/p>\n<p><strong>Soup<\/strong><br \/>\n200-250 ml unsweetened soy milk<br \/>\nChinese mackerel or chicken soup base<br \/>\n1 tsp sesame oil<br \/>\nNerigoma (according to taste)<br \/>\nOyster sauce (according to taste)<br \/>\nSesame seeds, grounded and steeped in hot water (according to taste)<br \/>\nJapanese pepper (optional)<br \/>\nSalt and pepper to taste<\/p>\n<p>Chinese noodles (raw or dried)<br \/>\nSpinach or bok choy, blanched<br \/>\n1pc onsen tamago (Japanese slow-cooked egg)<br \/>\nChili oil<\/p>\n<p><strong>Cooking directions:<\/strong><\/p>\n<p>1. To make the nikumiso, saute the ginger in sesame oil. Once fragrant, add the doubanjiang, minced pork, and Shaoxing wine or sake.<br \/>\n2. When almost cooked, add the oyster sauce and scallions.<br \/>\n3. For the soup, dilute the nerigoma in a small amount of hot water, then add the rest of the ingredients and mix well (use a protein shaker to make it easier). Chill the soup in the refrigerator.<br \/>\n4. Boil the noodles until firm, then shock it in cold water to stop the cooking process.<br \/>\n5. Shake the chilled soup once again and add to a bowl together with the noodles. Top with the blanched spinach or bok choy, nikumiso, and onsen tamago.
