Primal cuts\u00a0are placed in a\u00a0climate-controlled cooler. The process changes the beef in two ways: moisture is evaporated from the muscle and the beef&#8217;s natural enzymes break down the connective tissue of the muscle. Resulting in\u00a0a greater concentration of beef flavor and taste as well as a\u00a0more tender beef. <strong>Ruby Jack&#8217;s Steakhouse and Bar<\/strong> from Tokyo has dry aged beef upon availability and a new menu we got to taste.<\/p>\n<p style=\"text-align: center\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-28727\" src=\"https:\/\/primer.com.ph\/blog\/wp-content\/uploads\/sites\/14\/2018\/05\/rubyjack.png\" alt=\"\" width=\"1024\" height=\"683\" srcset=\"https:\/\/primer.com.ph\/blog\/wp-content\/uploads\/sites\/14\/2018\/05\/rubyjack.png 1024w, https:\/\/primer.com.ph\/blog\/wp-content\/uploads\/sites\/14\/2018\/05\/rubyjack-300x200.png 300w, https:\/\/primer.com.ph\/blog\/wp-content\/uploads\/sites\/14\/2018\/05\/rubyjack-768x512.png 768w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/p>\n<p>Chef Matthew Crabbe, co-owner and founder of Ruby Jack&#8217;s, visited their branch at City of Dreams Manila last week to introduce the new menu that is going to rock the world of all meat lovers and foodies.<\/p>\n<p>The lunch began with starters of salads and sausages. In keeping with the tradition of meats, they served the Lamb and Pork RJ Made Sausages in Onion Sauce (Php 450) that is made from scratch. Their\u00a0Ruby&#8217;s Ceasar Salad (Php 600), whereas, was presented very interestingly with finely grated cheese atop crunchy veggies\u2014matching the summery vibe of the country with its lightness and sweetness.<\/p>\n<p>We then went on to the\u00a0cheesy and tender 45-day dry aged <strong>Australian Prime Rib<\/strong>\u00a0(Php 900 per 100 g), whose texture lies somewhere between melt-in-your-mouth and juicy-chewy-goodness, perfect for anyone who likes to eat steak. The sauce that Ruby Jacks served with the meat made each piece interesting and exciting to devour.<\/p>\n<p style=\"text-align: center\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-28731\" src=\"https:\/\/primer.com.ph\/blog\/wp-content\/uploads\/sites\/14\/2018\/05\/rubyjack5.png\" alt=\"\" width=\"1024\" height=\"683\" srcset=\"https:\/\/primer.com.ph\/blog\/wp-content\/uploads\/sites\/14\/2018\/05\/rubyjack5.png 1024w, https:\/\/primer.com.ph\/blog\/wp-content\/uploads\/sites\/14\/2018\/05\/rubyjack5-300x200.png 300w, https:\/\/primer.com.ph\/blog\/wp-content\/uploads\/sites\/14\/2018\/05\/rubyjack5-768x512.png 768w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><span style=\"font-size: 10pt\"><em>45-Day Dry Aged Australian Prime Rib has the right amount of fat and meat\u00a0<\/em><\/span><\/p>\n<p style=\"text-align: left\">Finally, they also served us plenty of desserts to enjoy. The name of the restaurant was embodied in two very different celebration cakes: the\u00a0light and fruity cake, Ruby is made of Japanese chiffon with a meringue layer and light mousse topped with fruits and covered in torched Italian meringue and the chocolate decadent Jack,\u00a0which is a chocolate moist cake with a ganache\u00a0filling, decorated in meringue kisses, brownies,\u00a0and chocolate butter icing.
