They took the classic pad thai, with all of its crispiness and crunchiness, and gave it a Filipino twist: using <em>bihon<\/em> or glass noodles instead of the traditional wide rice noodles. It\u2019s a Milanese dish that\u2019s usually done with cross-cut veal shanks braised with veggies, white wine, and broth. At Crisp, however, it becomes a Filipino fusion dish, replacing white wine with <em>basi<\/em> or sugar cane wine.
