  • The Philippines is an agricultural country and it houses crops that has an organic quality. There are few local restaurants in the metro that use these raw ingredients; Sagana Épicerie and Bistro in Bonifacio Global City is one of those.

    Sagana is a French restaurant incorporating as much organic local ingredients as possible while bringing France to your table. At its helm is French celebrity Chef Marc Aubry who makes sure that everyone–not just locals–will definitely enjoy the food.

    Sagana is a Tagalog word for bountiful. The restaurant utilizes crops from all over the country following the French concept of “terroir,” wherein a specific piece of land is cultivated to produce the best crop. This is reflected in their interiors that are brimming with plants.

    Sagana uses a visual menu of French cuisine rather than just one specialty taste of a region. Customers will also like how each dish is cooked the same way they do in France.

    Chef Aubry tells us that their supplier will often bring new vegetables especially when some crops are damaged or not in season. He presents the Market Menu, a weekly special, in which new and extra raw ingredients are used. Thus, this menu changes weekly. However, they offer dishes that are not included and are always available such as the Algerian Couscous (Php 980 single serving, Php 1600 double servings), which is a chicken and beef broth served with grilled US lamb chops, merguez sausage and wheat semolina. Meanwhile, the Grilled Apahap (Php 760) is served with creamed vegetable ratatouille and fried shallots.

    Being an épicerie, Sagana sells same organic ingredients that are used in their cooking, as well as French wines and sauces. Nothing is wasted in Sagana and local products are patronized.
